JASMINE APPLE CAKE



2 pieces 7" sponge cake
1 chopped green apple, mix with 2 tbsp sugar
n 1 tsp cinnamon powder (keep in fridge hrs bef spreading)

APPLE FILLING
80 ML APPLE PUREE
1/2 TSP LEMON JUICE
1 TSP GELATINE _ 1 TBSP HOT WATER
100 GM WHIPPING CREAM - WHIP N KEEP IN FRIDGE
FEW DROPS OF GREEN APPLE COLOURING

40 GM ITALIAN MERINGUE
(-100 GM CASTER SUGAR
25 ML WATER
50 GM EGG WHITE
BOIL WATER N SUGAR TILL THICK
WHIP EGG WHITE THEN POUR BOILING SUGAR
BEAT TILL ROOM TEMPERATURE-)
ADD ALL INGREDIENTS SLOWLY BUT NOT TOO LONG

JASMINE FILLING
80 GM UHT MILK
20 GM CASTER SUGAR
5 GM JASMINE FLOWER
1 TSP GELATINE POWDER
100 GM WHIPPING CREAM
(SIMMER MILK AND SUGAR N JASMINE FLOWER
WHIP UP CREAM
SLOWLY ADD MILK

ARRANGE CHOPPED APPLE ONTO THE CAKE
POUR APPLE FILLING
PUT THE 2ND LAYER
POUR JASMINE FILLING
PUT IN FRIDGE FOR 2 HRS BEF SERVING
